Wonderful spring weather in Norway today. I have had my day off today, but are going to a meeting this afternoon at work. Had a lovely visit from my mom and just had the rest of the day doing practical duties.
Today’s recipe is easy to make and taste just delicious.
Recipe Cashew sause;
1 cup raw cashews, soaked overnight in water, drain
1 medium tomato, chopped
⅓ cup almond milk
2 tablespoons nutritional yeast
2 tablespoons apple juice
1 tablespoon sesame seeds
1 teaspoon white miso
1 clove garlic
Salt & pepper
Put all in the food processor and mix well.
Chop 1 red onion, 1 clove garlic and ½ cauliflower.
Add spice mix; ½ tsp chili, salt & pepper, paprika powder and the cashew sauce.
Put in the oven and cook for about 20 min 200 C.
