Sending some Christmas joy along with today’s recipes, and a Happy Friday.

Hope you have time to relax and enjoy the Christmas season. Just the simple things that often brings the most joy; lights on the trees, lots of stores filled with delicious Christmas food and decorations, and all else that we connect with Christmas.

Posting today a recipe of gingerbread and a ginger smoothie. Hope you enjoy the recipes.

Ginger Smoothie For 2 Prep.time: 10 min

100g frozen strawberries

1 banana

1tsp Cinnamon

1 tsp anice

3 cm ginger

2 cups almond milk

6 dates, remove the stone


Strawberries, 85% chocolate, walnuts



1.    Start by putting all the ingredients in the blender.

2.    Remember to remove the stones from the dates, and to peel and cut the ginger.

3.    Blend well.

4.    Enjoy!


Gingerbread   Cook 180 C 10 min
200g buckwheat flour75g flair flour

1 ½ tsp gingerbread spices

1 tsp baking soda 60g brown sugar

2 eggs

125g honny

35g butter

Recipe without sugar and butter:

200g buckwheat flour

75g flair flour

1 ½ tsp gingerbread spices

1 tsp baking soda

13-15 Medjol dates, remember to remove the stone

2 eggs; You can use 4tbsp chickpea liquid instead, I recommend that you add 2 tsp gingerbread spices to get the nice gingerbread taste.


1.    Start by putting all the ingredients in a bowl, if you use Medjol dates, I recommend that you put it all in the food processor.

2.    Blend well, and leave the mixture in the refrigerator for I hour.

3.    I recommend that you use greaseproof paper to roll out the dough on. Roll the dough about 1 1/2 cm thick and print out desired shapes.

4.    Put in the center of the oven for about 10 min.
